Grape: Pecorino
Grape history:
Vine of uncertain origin, the Pecorino has been grown for centuries in the central regions of Italy, especially Marche and Abruzzo, where it is known also with different denominations. The bunch is medium sized, long, cylindrical – or pyramid-shaped, often with wings, with widely spaced berries. The maturation is medium-early, and is usually harvested in mid September.
Winemaking:
Spontaneous fermentation starter due to yeasts naturally present on grapes
Fermentation: In concrete tanks
Ageing:
In concrete tanks before bottling followed by 3 months in bottle. The wine is bottled without being filtered nor stabilized.
Organoleptic evaluation and food pairing:
This wines strike your senses in all of their aspects beginning with their appearance. The aroma and palate are arresting, complex expressions that defy description or conversely, invite a myriad of words that can never quite get at everything that’s going on. The end result is an amazingly complex and profound wine that can age for years. Bouquet of baking spice, baked apple, sweet citrus, full-bodied wine with a slightly rich, creamy mouth-feel and acidity.
