Vinification

The grapes we cultivate leave a legacy. They contain the essence of something we think we have lost, yet it is there, within reach. We just need to know how to bring it out. At Tenuta Ulisse, we do this in a unique way: we harvest the grapes and freeze them immediately. Following thermal shock and without contact with oxygen, the molecular walls of the skin break down, allowing aromas and fragrances to emerge vividly. It is like a snapshot, a way to preserve all the richness of flavors that the land generously imparts to our grapes. The grape berry carries the identity of a place, a uniqueness of flavors that we want to respect and transmit unchanged. Maintaining a true, genuine essence in a highly refined product: this is what we do.
