Pecorino Brut

The result of sparkling the Pecorino grape variety, made for the first time in Abruzzo by Tenuta Ulisse. A new way of telling one's own story, exploiting the hidden potential of an aromatic grape variety yet to be discovered.

In an autoclave. The must is stored in refrigerated tanks at a temperature close to 0°C, and it is placed directly in the autoclave where, after the first fermentation in steel at a controlled temperature, the frothing takes place in the autoclave using the Charmat method. Subsequent ageing in the bottle for 3 months.
Straw yellow color and a fine, elegant and continuous perlage. Intense aroma thanks to the varietal personality of tropical fruit of Pecorino. Rich in complexity and elegance.
To grasp its richness and aromatic complexity, we recommend it as a solo aperitif. If you wish to accompany it with flavors, we recommend it with raw fish such as tuna, cuttlefish or octopus or even turbot carpaccio, or with fish pastas and risottos, fresh cheeses and baked fish. Serving temperature 8/10°C
